No-Tuna Salad / Sandwich
Easy to make and delicious!
This is our favorite summer salad and it is a great addition to sandwiches!
You can also enjoy this No-tuna salad on crackers, or with cut up veggies too!
No-Tuna Salad Recipe:
Servings: 2-4 sandwiches
1 can Chickpeas, drained
2 Tbsp. Mayo (I used Follow Your Heart Organic Vegenaise)
1/4 cup yellow onion, diced
1/4 cup celery, chopped
1 tsp. kelp granules (I used Main Coast)
1 small pickle, chopped
Dill to taste
Salt to taste
Place drained chickpeas in a bowl. Add the mayo. Using a potato masher, gently mash the chickpeas. Make sure to leave some chunks so, be careful not to puree :)
Add all the other ingredients to the bowl. Stir well. You may want to place in the fridge for 30 minutes if you want cold, otherwise, it's ready to be served! Enjoy!
We slightly toasted some bagels. On the bottom part of the bagel we added some cut up romaine, spinach, No-tuna salad, sliced tomato and tempeh bacon, then the top bagel. That's it!
Romaine leaf Taco:
Wash very well, some romaine leaves, slightly dry them. Scoop some No-tuna salad on top of each romaine leaf and serve! This is great as a Gluten-Free option and it's so refreshing!
